Vegan MoFo: Pumpkin Chai Brownies

And so it goes. Today is the last day of Vegan MoFo. This month of posting has been fun, tiring, and inspirational. Did I mention tiring? I honestly cannot wait to just veg on my couch for a week like a loser after I press publish on this baby. I have done 15 blog posts (which means 15 new recipes) and a slew of Instagram pics this year. Vegan MoFo: 5-Ingredient Vanilla Ice Cream

The lovely Vegan MoFo folks have declared today’s prompt as: “What [insert well known person] would eat if they were vegan”. I am curious as to what the other MoFo-ers will be posting for today, as I know that I was stumped by this. I guess I can see some folks recreating meat dishes for famous carnivores, but other than that, nothing really comes to my mind. That is why I have adapted the prompt to be “What Maggie would eat if she were vegan”, since I am vegetarian. Obviously I am well known 😛 My boyfriend and I are ice cream maniacs. It’s a dessert that we both enjoy sharing together (which is rare, given that I am a chocoholic and he is a vanilla-and-fruit guy. We compromise by usually getting one scoop chocolate and one scoop fruit. Or both scoops coffee, since we both like that. Weird, I know). Vegan MoFo: Chocolate-Chip Corn Muffins

I make vegan baked goods quite often for my coworkers. To answer today’s Vegan MoFo prompt, “Share something vegan (and delicious, duh!) with a non-vegan” I am sharing this recipe for Chocolate-Chip Corn Muffins. I made these muffins a few weeks back and brought them into work for my hungry colleagues to gobble down. They did just that. Not one was left over, and I received many a compliment. Even though I am not vegan, I often veganize my baked goods. I do so largely because I eat dessert every day. Yes, you heard me right. Every. Single. Day. Because of this, I don’t want to be eating mountains of butter, eggs, and refined sugar on a regular basis. I’d much rather eat something made with whole grains, heart-healthy fats, and unrefined sugars. Also, vegan baked goods taste remarkably similar to the traditional (barring, of course, some recipes which require a lot of rising).
